Υπέροχο ριζότο με σαμπάνια και γαρίδες! Champagne & prawn risotto!

Ριζότο με σαμπάνια και γαρίδες

Μια πρέζα κρόκο Κοζάνης (5-6 κλωστές)
2-3 κουταλιές της σούπας βούτυρο
1 κρεμμύδι ψιλοκομμένο
400 γρ ρύζι Αρμπόριο
160 ml σαμπάνια ή λευκό ξηρό αφρώδες κρασί, συν λίγο για σερβίρισμα
1 λίτρο ζωμό κότας (δικό σας ακόμη καλύτερα, ή… από κυβάκια)
300γρ βρασμένες και καθαρισμένες γαρίδες (μικρές)
Αλάτι και φρεσκοτριμμένο πιπέρι

Βάλτε τον κρόκο Κοζάνης σε ένα μικρό μπωλάκι, καλύψτε το με βραστό νερό και αφήστε το για λίγο.
Σε μέτρια θερμοκρασία, τοποθετήστε μια μεγάλη αντικολλητική κατσαρόλα, λιώστε το βούτυρο και τσιγαρίστε το κρεμμύδι. Προσθέστε το ρύζι και ανακατέψτε για λίγα λεπτά, μέχρι να γίνει διάφανο. Σβήστε με σαμπάνια ή κρασί και αφήστε για 5 λεπτά ανοιχτή την κατσαρόλα για να εξατμιστεί το αλκοόλ. Ανακατεύετε συχνά. Ανακατέψτε τον κρόκο Κοζάνης μέσα στο νερό του και ρίξτε το στο ρύζι, και λίγο λίγο προσθέστε το ζωμό, ανακατεύοντας κάθε φορά καλά. Τσεκάρετε το ριζότο, μέχρι να είναι μαλακό αλλά στο κέντρο του να κρατάει λίγο… Ρίξτε τις γαρίδες μέσα και αφήστε να πάρουν μια βράση με το φαγητό. Προσθέστε λίγο αλάτι και λίγο πιπέρι. Διαφορετικά, ζεστάνετε τις γαρίδες ξεχωριστά σε ένα τηγάνι και βάλτε τις στο τέλος πάνω από το σερβιρισμένο ριζότο. Ρίξτε μια κουταλιά σαμπάνια πάνω από το κάθε πιάτο.

Champagne & prawn risotto

Pinch of saffron
Large knob of butter (2-3 tablespoon)
1 onion, finely chopped
400g arborio rice
160ml champagne or dry sparkling white wine, plus extra to serve
1 litre chicken stock
300g cooked baby prawns, peeled
Salt and pepper to taste

1. Place the saffron in a small bowl, cover with a splash of boiling water and leave to stand for a few minutes.
2. In a large saucepan over a medium heat, melt the butter and sauté the onion until soft. Add the rice and stir for a few minutes until it starts to go translucent. Add the champagne, stir and allow the alcohol to cook off. Stir in the saffron and its soaking water, then gradually add the stock a ladleful at a time, stirring in before adding the next. Once all the stock is added, keep stirring until the risotto is tender on the outside with a slight bite to the centre. Stir in the prawns and heat through before serving. Alternatively, heat the prawns in a separate pan and serve on top of the risotto. Add a dash of champagne to each plate for a decadent supper.
